The wine cellar built under the countryhouse (1847) has vaulted brick roof and was originally unpaved. The temperature and the humidity are naturally stable all year long. The must of grape produced exclusively from the vines of the Estate is vindicated in thermocontrolled steel containers and the wine is refined in Slavonia oak wooden barrels and in French barriques (Allier).
Vines are cultivated on limestone ground, exposed to the south-west, 250 meters above sea level, with biological manuring respectful for environment. Grape production of only 2 tons per acre helps bunches maturation; vindication is carried out exclusively in the best Years. The Tenuta San Rocco Winery is associated with Movimento del Turismo del Vino, Club Papillon, Touritng Club Italiano and is mentioned in The Luca Maroni Guides of The Best Italian Wines (1999-2000)
